Few recipes for „Postul Craciunului“: Last three Christmas recipes

Last days I was busy with Chrismas preparation, so I didn´t post any new recipes. I try to change it now. These three recipes will be Christmas recipes. This is vegan version of Christmas salat, gingerbread and rawfaello.

Christmas “potato” salad

In Slovakia we eat this salat with a fried fish on the Christmas eve. Usually it is made from mayonnaise. Of course I don´t eat mayonnaise and fish. You can replace mayonnaise with vegan mayonnaise, but I used to do it otherwise. I also replace potato by avocado. I love this salad.

Mayonnaise

1 cup of soaked keshu nuts
2 spoons of apple vinegar
½ cup of juice from sauerkraut
½ cup of chopped sauerkraut
3 cloves of garlic
½ tea spoon of salt
½ tea spoon of mustard

Let´s mix all ingerdiets with blender except sauerkraut until it will be smooth. Add sauerkraut on the end and mix it a little bit. This mayonnaise you can use with other salands or with burger as well.

Salat

1,5 cup of fresh or frozen peas
1,5 cup of fresh or frozen corn
1 cup of pickles (cucumber)
1 small chopped onion
2 avocados cutted for cubes (you can use also boiled potatoes)

Let´s put all ingrediets together and add the mayonnaise. Enjoy!

Gingerbread

Ingredients:
400 g spelt flour (but this year I used rye flour)
50 ml agave syrup (or other sweetener)
½ ripe banana
50 ml coconut oil (or other)
100 ml of plant  milk
50 g of sugar
50 g of walnuts
4 tea spoons of spice for gingerbread (I didn´t find it, so I used only ginger, cinamon and lemon crust)
1 tea spoon of baking soda

How to do:
1. Use the blender and mix banana, agave syrup, oil and plant milk.
2. Crushed walnuts.
3. Make a dough from all ingredients.
4. Put it in the frige for at least 12 hours.
5. Spread it and cut out different shapes.6. Use the baking paper and bake it 10-15 minutes on 160°.

Rawfaello

Ingredients:
1 cup of coconut
2-3 spoons of agave syrup
1/3 cup of coconut oil (in this case you can´t replace it)
pinch of salt
1/4 cup keshu nuts soaked 2 hours (you can skip it)
almonds

How to do:
1. Use the blender and mix all ingredients except almonds.
2. Make small balls and get 1 almond to the middle.
3. Put it in the fridge for 1 hour.
4. Enjoy!
